I've also found that making a worst-case scenario outline reminded me of resources I didn't realize I had. None of the paths forward are good, but at least I can see them now, and know what to do, which makes a big difference and reduces the overwhelming uncertainty.
p.s. I know we've all got specific dietary needs that make cooking and "cheap, easy recipes" hard. I've found the website Budget Bytes really helpful for discovering new go-to things that I can eat and can prepare without too much work. On a really good energy day, I can even bake my new favorite cookie recipe, which I found on that site. (Or, let's be real, I can make dough one day and bake the cookies the next.)
I recently found out that our local food bank offers Shoprite gift cards for people with dietary restrictions. If you go and they don't have things you can eat, ask the people there if they have a similar kind of program.
